Grass Finished Lamb
Our breeding herd consists of Cheviot/Targhee cross ewes. The Cheviot breed is noted as an excellent meat breed in the UK, with meaty chops, broad loin of superior quality and a full leg. The Cheviot puts on little excess fat when grass fed, delivering more pounds of lamb "On The Hoof." We chose to cross in Targhee to improve wool grade and frame size without sacrificing the quality of the meat.
We use a Texel ram to complete our Perfect Meat Cross! Texel lamb is well-known and highly rated for its exceptionally subtle, succulent flavor. Texel rams are noted for passing on their lean carcass traits to cross-bred progeny and show an advantage of one full leg score in breed comparisons!
